Last night I made chocolate cupcakes based on The Pioneer Woman’s Chocolate Sheet Cake. I didn’t have any buttermilk so I used regular milk. I have a mental note to make sure I have all my ingredients next time. And my was it delicious! But I had a little problem making the batter. Maybe I need a sifter, but my dry ingredients didn’t seem to disolve all the way. I brought them to work this morning and nobody has said anything. The hubby noticed (but he doesn’t count!) and I was really nervous to bring them. But I’m sure someone would have mentioned them if they tasted it. Needless to say, I feel like the cupcakes are a big success. I’ve never made homemade cupcakes but they are really good! I did not make the frosting because a.) I ran out of butter (unbelievable) and b.) I had leftover store brand that I wanted to use up. Everyone has liked them so far so I guess I’ll have to stick this recipe in my cookbook as a keeper!
