For Christmas, I received The Perfect Brownie Pan and was excited to try it. Since I was asked to create some desserts yesterday I decided on something that didn’t involve peanuts in case of any allergies and thought using this pan would be perfect.
I decided on Chocolate Lovers Peppermint Brownies from Frites and Fries. I made a double batch.
- 1/2 c. unsalted butter, melted
- 1 1/4 c. sugar
- 1/2 c. all-purpose flour
- 3/4 c. cocoa powder
- 1/4 tsp. salt
- 2 large eggs
- 25 1” chocolate covered peppermints or a package of Andes chocolate mints (I used York Peppermint Patties)
Preheat oven to 350. Cream your butter and sugar together. Add in sifted flour, cocoa and salt. I was using salted butter because that was what was on hand and therefore omitted the additional salt. Then add in the eggs. I put a small layer of brownie on the bottom, layered with York Peppermint Patties and then another layer of brownie according to the directions.
I think a combination of the pan and the lack of greasing the pan before assembling created this mess.
I could not get the brownies out of the pan. They looked so nice before I tried to remove them. The fact that this pan was so poorly crafted did not help matters. Needless to say, I may never use this pan again. I *might* if I can get over this frustration. Although it probably won’t last long because I had to use a knife to get some brownie pieces out and scratched the coating. No doubt it will start rusting soon.
Because the pan was not coated, none of my brownies came out looking pretty. However, the amazing yumminess of these brownies fully make up for it. I’ll have to see if I can make it without any problems if I grease the pan. These brownies are really good and I’m hoping to use them for many other things to come if I can figure out how to make them perfectly. They are so rich and fudgey but without a nice greased bottom layer, they sort of fall apart. I told my co-worker this morning and she had no doubt everyone would be more than happy to eat them with a fork.
So for all the crying and frustrations that I went through baking last night, they were still pretty happy with what I brought for the community event tomorrow.
